These smoky pork and pineapple skewers bring bold Mexican flavours to your grill.
Ingredients
- 10 Guerrero® Homestyle Soft Tacos
- 60g ancho chillis
- ½ cup white vinegar
- 2 cloves of garlic
- ¼ piece of brown onion
- 450g pork, diced
- 1 cup pineapple, diced
- 1 red capsicum, diced
- 20 spring onions, quartered
- ¼ cup olive oil
- 2 tbsp salt
- ½ cup jalapeño chillis, cut into halves
Method
1. In a small skillet, fry the ancho chilli, garlic and onion. Then blend it in a blender with white vinegar, olive oil and salt.
2. Marinate meat in marinade for 20 minutes. Assemble skewers of meat, pineapple, capsicum, brown onions and jalapeño chillis and place on a hot grill.
3. Occasionally brush marinade on skewers for added flavour.
4. Heat tortillas according to package instructions. To serve, wrap tortillas around grilled skewers and serve as tacos.Tip:
Brush marinade on warm tortillas and serve with grilled onions.
