With two cheeses, this tortilla pizza is simple to make and very satisfying for a quick lunch or dinner. The toppings are inspired by the classic Molletes sandwich served in Mexico City.
Ingredients
- 6 Guerrero® Homestyle Burritos
- 2 tbsp olive oil
- 1 ½ cups refried beans
- 2 cups Buffalo Mozzarella Cheese
- ½ cup crumbled Danish Style Feta cheese
Pico de Gallo
- 3 ripe tomatoes, finely diced
- ¼ small red onion, finely diced
- 1 small fresh chilli (or jalapeño), finely chopped (optional)
- Juice of 1 lime
- 2 tbsp fresh coriander, finely chopped
- Salt, to taste
Method
1. Preheat oven grill to high. Brush both sides of each tortilla with olive oil; spread refried beans evenly all over the tortillas. Sprinkle Mozzarella cheese over top.
2. Heat skillet over medium heat; cook 1 tortilla for 2 to 3 minutes or until cheese is melted. Transfer to a baking sheet. Repeat with remaining tortillas.
3. Place baking sheet on rack in centre of oven; grill for 3 to 4 minutes or until cheese is golden and bubbly.
4. Meanwhile, to make Pico de Gallo, combine tomatoes, red onion and chilli in a bowl. Add lime juice, coriander and a pinch of salt. Gently mix and taste, adjust seasoning if needed. Rest for 5 minutes before serving for best flavour.
5. Spoon ¼ cup Pico de Gallo on top of each tortilla. Sprinkle feta cheese over top.
