Crisp, golden tostadas are layered with warm refried beans, tender chicken, and a vibrant fresh topping, creating a richly textured bite finished with delicate crumbled cheese.
Ingredients
- 6 Guerrero® Homestyle Fajitas
- Neutral oil (vegetable or canola), for frying
- 1½ cups cooked shredded chicken
- 1 cup chopped onion
- 1 cup chopped tomato
- 1 cup chopped radish
- ½ cup chopped coriander
- 3 tablespoons lime juice
- ½ tablespoon olive oil
- 1 teaspoon salt
- ½ cup refried beans
- ½ cup crumbled fresh cheese
Method
Tostadas
1. Heat a thin layer of neutral oil in a wide frying pan over medium heat. Fry the flour tortillas one at a time for 1–2 minutes per side, turning once, until golden and crisp. Drain on a paper towel and set aside.
Fresh topping
1. In a bowl, combine the onion, tomato, radish, cilantro, lime juice, olive oil, and salt. Mix well and set aside.
Chicken
1. Gently heat the shredded chicken in a pan or microwave. Season lightly with salt if needed.
Assembly
1. Spread a tablespoon of refried beans on each tostada. Top with shredded chicken, then spoon over the fresh vegetable mixture.
2. Sprinkle with crumbled fresh cheese and serve immediately with guacamole.
Tip
For extra flavour, add chopped green chilli or a mild salsa verde. Flour-tortilla tostadas should be golden and firm, not brittle, to hold the toppings.
